I think this is a great summer dish. Relatively few and easy ingredients, mix of textures (crunchy, firm, etc); the chicken can be hot or cold, so this makes it very versatile. I also love the fact that it is non-dairy (ie has no dairy ingredients), so for someone who keeps kosher or has dairy allergies, this is fantastic. Love it!
