Ingredients

SALAD

cups thin strips cooked pork

cup cashew halves or pieces

carrots, cut into matchstick pieces (about 1 cup)

stalk celery, cut into matchstick pieces (about 3/4 cup)
1
bunch green onions, cut into 1/2- inch pieces (about 1/2 cup)
Fresh spinach leaves

DRESSING

1/3
cup oil
1/4
cup rice vinegar or white vinegar

tablespoons soy sauce
1
teaspoon ginger
1/4
teaspoon pepper

Directions

  1. 1 In medium bowl, combine all salad ingredients except spinach.
  2. 2 In jar with tight-fitting lid, combine all dressing ingredients; shake well. Pour half of dressing over salad; toss gently to mix.
  3. 3 To serve, line 4 individual plates with spinach. Spoon salad over spinach. Pass remaining dressing.
