* Do not use chow mein noodles. Thin Chinese wheat noodles can be found in the oriental section of large supermarkets. ** One 6-oz. pkg. frozen pea pods can be substituted for fresh pea pods.

This recipe calls for Chinese noodles--thin wheat noodles that cook very quickly and are eaten hot or cold throughout Asis. Do not substitute crunchy fried chow mein noodles. You may, however, substitute angel hair pasta.

One cup of frozen regular peas can take the place of the snow peas or sugar snap peas.

Serve the soup in Chinese soup bowls with ceramic spoons, available in Chinese grocery shops. Asian specialty shops. Sprinkle some minced green onion over each serving.
