Ingredients

boneless, skinless chicken breast, cooked and shredded

bag finely shredded green cabbage
1
bunch green onions, chopped
1
package frozen shelled edamame beans, thawed (cold but not frozen)
1/2
cup oven roasted sliced almonds
2
tablespoons sesame seeds, lightly toasted
2
packages top ramen noodles, crushed (do not cook or use broth)
2
tablespoons sugar
1
teaspoon salt
1/2
teaspoon ground black pepper
3
tablespoons rice vinegar
1/2
cup sesame or olive oil

  • 1 In a medium bowl mix together sugar, salt, pepper, vinegar and oil; set aside.
  • 2 In a large bowl toss together chicken, cabbage, green onions, edamame, sliced almonds, sesame seeds, crushed ramen noodles and dressing; cover and refrigerate for 1 hour before serving.

For Asian coleslaw version omit chicken.
