Artichoke-Crab Spread

Slow cook this delicious artichoke and imitation crabmeat spread and serve as a great appetizer over bread slices.

Ingredients

can (14 ounces) artichoke heart quarters, drained and coarsely chopped

package (8 ounces) cream cheese, cubed

medium green onions, sliced (1/4 cup)
1
cup shredded imitation crabmeat (4 ounces)
1/2
cup grated Parmesan cheese
4
teaspoons lemon juice
French baguette or cocktail rye bread slices, for serving, if desired

Directions

  • 1 Spray inside of 1- to 2 1/2-quart slow cooker with cooking spray.
  • 2 Place all ingredients except bread in cooker.
  • 3 Cover and cook on low heat setting 1 to 1 1/4 hours (or high heat setting 30 to 45 minutes) or until cream cheese is melted. Stir until cheese is smooth.
  • 4 Scrape down side of cooker with rubber spatula to help prevent edge of spread from scorching. Turn to low heat setting.
  • 5 Serve with bread slices. Spread will hold up to 3 hours.

Everyone will love this delicious, rich spread. Because of the richness of the cheeses, however, the spread may start to separate, and little puddles could appear on the surface. So stir the spread occasionally, and it will look as good as new.

Fresh crabmeat isn't available to everyone all year around, so that is why we suggest using the imitation crabmeat. The shredded imitation crabmeat for salad is perfect for this dip. But you can use drained canned crabmeat, or if you are fortunate, use shredded cooked fresh crabmeat.

As is this recipe is very bland, even with the red pepper flakes. Add juice from 1/2 lemon and zest from 1/2 lemon. Old Bay Seasoning, about 1/4- 1/2 tsp. I pretty much doubled the recipe execpt for the artichokes and I thought one can was plenty for a double recipe. I sliced 2 pb fb loaves in about 3/8" slices. About 19 slices per loaf. I buttered each slice and put under broiler till golden. Then added spread and broiled again till bubbly and warm. After plating I added the parsley and it looked like a very professional appetizer, easy to pick up and eat. Low-fat cr cheese, parm instead of
