Everyone always LOVES this recipe. I do it much more simply, just apricot jam, brie, and the croissant dough.
I also cut the round of brie in half and put the preserves underneath the bottom half, in the middle, and on the top of the top half, and also some on top of the whole thing once the dough is all pinched together.
Make sure to bake this for a while - it's taken up to 45 minutes for me before. And when preparing it, put it in the dish you plan to bake it in with plenty of space for melting.
