Apple-Walnut Salad

Ingredients

  • 1 large Granny Smith apple, chopped (1 3/4 cups)
  • 1 large Gala apple, chopped (1 3/4 cups)
  • 1/2 cup golden raisins
  • 1/2 cup plain yogurt
  • 1 tablespoon sugar
  • 1 tablespoon fresh orange juice
  • 1/2 cup chopped walnuts, toasted

    In large bowl, mix apples and raisins. In small bowl, mix yogurt, sugar and orange juice. Pour over apple mixture and stir to coat. Serve or refrigerate. Stir in walnuts just before serving.

  • Make your apple and walnut salad without raisins and try orange-flavored or regular sweetened dried cranberries instead.
  • Shelled walnuts can be refrigerated, tightly covered, up to 6 months or frozen up to 1 year. There’s no need to thaw them before chopping and toasting.
  • Toasting the walnuts for the salad adds depth and richness-don’t skip this step! To toast walnuts, heat the oven to 350°F. Spread nuts in an ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until light brown.
