These were delicious! I used regular muffin cups instead of jumbo, and they turned out well! I just estimated for the size, and made about 24 cupcakes. I also used homemade apple pie filling. They turned out great! I brought them to school and everyone was raving about them. They really do taste like apple pie!

These were incredible! Everyone that tried them, LOVED them. I didn't have a jumbo muffin pan, so I used the standard muffin pan. Just modified the ingredients to fit the smaller cup size, and got 2 dozen cupcakes. Excellent!

This was an awesome fall treat! Very easy to make. I made it into regular size cupcakes and it made 20. Baked cupcakes for 24 minutes (rotating at 12 minutes).

Makes a super layer cake! I used 2 9" nonstick metal pie plates and followed the rest of the recipe. Unfolded the pie crusts into the pie plates and cut off the crust 1/2 way up the sides, baking at 450 for 5 minutes. Then I divided the pie filling equally into the bottom of each pie pan and did the same with the spice cake batter. Baked at 350 for about 35 minutes. Cooled for 10 minutes and removed from the pie plates to cool completely before frosting. I assembled into a layer cake with the crust sides together, frosting in between layers and on top with the cream cheese frosting. Yum!
