Apple Crisp Pie

This apple pie is made with fresh apples and a crunchy oat and pecan streusel topping. An apple crisp in a pie shell.

Ingredients

5 to 6 cups thinly sliced apples, a combination of varieties
juice of 1 lemon
1/2
cup granulated sugar
1/4
cup brown sugar, packed
1/4
cup melted butter

tablespoons flour
2
teaspoons ground cinnamon
1/8
teaspoon nutmeg
1
deep-dish pie shell, unbaked, 9-inch
Topping:
1/2
cup all purpose flour
1/2
cup granulated sugar
6
tablespoons butter, cut into small pieces
1/4
cup rolled oats
1/4
cup chopped pecans

Directions

  • 1 Toss sliced apples with lemon juice to coat well.
  • 2 Add 1/2 cup sugar and the brown sugar, 1/4 cup melted butter, flour, and spices.
  • 3 Stir until mixture is well blended. Prepare pie shell.
  • 4 In a food processor, combine topping ingredients; pulse until mixture is crumbly
  • 5 You can also use a pastry blender or forks to cut this mixture together.
  • 6 Pour apple mixture into the prepared pie shell
  • 7 Sprinkle topping mix evenly over top of apples.
  • 8 Place in preheated 375° oven.
  • 9 Bake for about 45 to 60 minutes, until apples are tender and topping is browned
  • 10 Check after about 30 to 35 minutes to make sure the crust isn't getting too brown
  • 11 Use a pie shield or ring of foil to protect the crust edge if necessary.

This was soooo good! I'm a horrible baker but this turned out great so I'm gonna note that it is also very simple. It was gone in two days. Big hit with the hubbie too who is very picky when it comes to sweets.

This is the best tasting apple pie and easy to make. I do not suggest using a food processor to mix the topping. Use a fork to blend pre-chopped pieces of butter into the remaining topping ingredients. Use your hands to help mix the cold butter into the dry topping ingredients but not too much or the butter will become too soften. Also, lemon juice is important so the apples do not brown.
