I almost didn't make this because the only review was one star. I am SO glad I ignored it. I made it exactly like the recipe,using a granny smith apple - which I think is the way to go. It was absolutely delicious. I cooked the pie crust 10 minutes the first step - I would keep that at 8 minutes. Crust was on the dry, crumbly side at 10 minutes initial cooking. Do not substitute with feta cheese as the other reviewer did - maybe gorgonzola - but feta would be a mistake. Pistachios werr a unique aspect of the recipe (a nice crunch) - but you could probably omit them if nuts are an issue. I will

I followed the intructions fully except I used feta instead of blue cheese which is a common subsitute. This recipe is gross. The thyme and shallots do not compliment cranberries and apples. We had to throw it out and it was a huge disappointment.
