I've made this several times for picnics and potlucks. It makes a lot! I like to use either the 4 cheese tortellini or sausage tortellini.

Served this for Mother''s Day Brunch. Everyone loved it even the younger kids who did not realize that the green stuff was spinach! I used tri-color tortellini to add color.
