Antipasto Onion-Tomato Salad

Ingredients

DRESSING

teaspoons red wine vinegar

SALAD

cup thinly sliced sweet onions, separated into rings

large tomatoes, thinly sliced

to 3 tablespoons sliced ripe olives

lettuce leaves
  • 1 In small jar with tight-fitting lid, combine all dressing ingredients; shake until well blended.
  • 2 In large bowl, combine onions, tomatoes and olives. Shake dressing and pour over salad; toss gently.
  • 3 Line 4 individual salad plates with lettuce. Spoon salad onto lettuce.
