cup butter or margarine, softened
(7-oz.) pkg. almond paste, cut into pieces
cup sugar
egg white
1 1/2
cups all purpose or unbleached flour
Liquid or paste food color


  1. 1 In large bowl, combine butter, almond paste and sugar; beat until well blended. Add egg white; beat well. Lightly spoon flour into measuring cup; level off. Add flour; blend well. (Dough will be stiff but very pliable.)
  2. 2 Divide dough into several portions; tint each with food color as desired. (Dough can be made up to 3 days ahead; wrap tightly and refrigerate.)
  3. 3 Bring dough to room temperature. Heat oven to 300°F. Sculpt dough into fun shapes such as animals, people or flowers. Use fork tines, small cutters, garlic press and other kitchen equipment to decorate cookie sculptures. Place cookie sculptures 2 inches apart on ungreased cookie sheets.
  4. 4 Bake at 300°F. for 15 to 20 minutes or until light brown around edges. (Smaller cookies will take a little less time.) Let stand on cookie sheets until firm and cool enough to handle. Remove sculptures from cookie sheets. Cool completely on wire racks.
