Almond Fruit Crescent Coffee Cake

COFFEE CAKE

cup ground almonds
1/4
cup sugar

tablespoons all-purpose flour

tablespoons margarine or butter, softened

teaspoons grated lemon peel
3/4
teaspoon almond extract
1/3
cup mixed candied fruit

(8-oz.) cans refrigerated crescent dinner rolls

GLAZE

1/2
cup powdered sugar
1/4
teaspoon almond extract
2
to 3 teaspoons milk

GARNISH

2
tablespoons sliced almonds

  • 1 Heat oven to 375°F. In medium bowl, combine ground almonds, sugar, flour, margarine, lemon peel and 3/4 teaspoon almond extract; blend well. Stir in candied fruit.
  • 2 Unroll dough; separate into 16 triangles. Sprinkle about 1 tablespoon almond mixture on each triangle. Starting with shortest side of triangle, roll loosely to opposite point. Place 9 rolls, point side down, in spoke fashion in ungreased 9-inch pie pan. Place remaining 7 rolls, point sidedown, around edge of pan.
  • 3 Bake at 375°F. for 20 to 30 minutes or until deep golden brown and center is no longer doughy. Remove from oven; let stand 5 minutes. Remove from pan.
  • 4 In small bowl, blend all glaze ingredients, adding enough milk for desired drizzling consistency. Drizzle over warm coffee cake. Garnish with sliced almonds. Serve warm.

"This was very good and easy. I melted the butter and spead on the triangles, then added the other ingredients. Used pecans and dried cranberries.

Christmast morning sellout! I grew up on almond rings from corner bakeries, and this one was as good as the best I remember. Skipped the candied fruit (never on my childhood rings), and amped-up the lemon: the grated rind of one fresh lemon. I chose unblanched almond halves; ground up skins added nice color to the filling. Forget the recipe's instructions to do two concentric rings of crescents; just put all but one crescent around the outside perimiter of the 9" pie plate, and put the last one in the empty center. 20 minutes was a hair too much cooking time; start with 18.
