Ingredients

lb ground meat (can be beef,chicken or turkey)
1/2
cup chopped fresh cilanatro
1/3
cup chopped fresh oregano
3/4
cup bread crumbs

egg, slightly beaten
1
tsp salt
1/2
tsp pepper
2
cloves minced garlic
2
quarts stock (beef or chicken)
1
14 oz can diced tomatoes and green chilies
3/4
cup each chopped celery, carrots, onions
1
14 oz can corn

Directions

  • 1 mix together first 8 ingredients, and form into 1 inch balls, heat stock to boiling, and drop meatballs into broth a few at a time.
  • 2 add remaining ingredients, and simmer for about 30 minutes.
  • 3 Serve with tortilla chips if desired, this is a hearty soup that my family loves.
