 How to Freeze a Casserole

• Casseroles can be frozen unbaked or baked.  Thaw overnight in the refrigerator, if possible, before baking.
• To bake a frozen casserole, the center of the mixture should reach 160 degrees F. Start checking the temperature after 1 hour of baking.
• Casseroles made with pasta, rice or potatoes tend to get mushy when frozen.
• If you're planning to thaw or reheat a casserole in the microwave, assemble it in a microwavable dish.

Taking casseroles to a potluck

• Consider buying an insulated tote.
• Attach rubber bands around handles to secure lid.  No lid? Cover with foil.
• Wrap the dish in a towel or in newspaper to insulate, and put in a cooler.
• Don't let perishable hot foods stand out for more than 2 hours.
