6-way Chicken Salad

This is a very colrful and tasty recipe! Bell pepper,scallions, pineapples,walnuts, apples and grapes 5 ingredients that all compliment the other!

Ingredients

large chicken breasts (boiled and shredded)
1/2
cup pineapple chunks drained (chunks should be a bit smaller that bite sized)

cup red grapes sliced in halves
1/2
gala apple diced
1/2
cup walnuts chopped
1
red or yellow bel pepper diced
1 1/2
cups mayo (or less if desired)
1
tsp salt and pepper
1
tbs curry powder
1/4
cup mustard
1
tsp garlic powder
1
bunch of green onions chopped

Directions

  • 1 Boil and shred chicken. Set aside and let cool completely.
  • 2 Mix all wet ingredients along with curry and garlic powder, salt and pepper.
  • 3 Add fruit, walnuts, and bell pepper to the wet ingredients. Fold together.
  • 4 Pour mix onto shredded chicken. Fold into chicken until mixed well.
