I’m a huge fan of spinach-artichoke dip. It’s one of those things I feel is a healthier option on the appetizer menu because it’s filled with spinach and artichokes. Never mind the ooey-gooey cheese–that’s just an added bonus.

Here’s an even more exciting way to eat your spinach – in this tasty Spinach-Artichoke Grilled Cheese Sandwich! I love how quickly it all came together, but the chewy pizza dough is really what gave this sandwich its edge. The pizza dough has a buttery crisp outside edge with a chewy pizza-dough center. Top that with the cheesy spinach artichoke dip and you’ll be wondering why never thought to use pizza dough for your grilled cheese before!

This couldn’t be any easier. Just grab a tube of Pillsbury Pizza Crust and press it out into an even layer.

While it’s baking, whip up the simple spinach and artichoke mixture in a medium-size bowl. Microwave for just 30 seconds, stir, and repeat.

Once the pizza dough has baked on both sides, carefully cut it into 8 equal-size rectangles. Heat up your griddle and get ready for sandwiches!

Butter the pizza bread rectangles and spread on a little of the spinach and artichoke mixture.

Top with another buttered slice of pizza bread and cook just like a regular grilled cheese. Flip! Once it’s golden brown on both sides, you’ll have yourself one tasty sandwich that’ll knock Popeye’s socks off.
