My life has been so crazy lately. Between work, family and more work, I’ve had little to no time to do a lot of cooking. Because I'm in a permanent state of "crunch time," I need simple-yet-delicious meals I can get on the table fast. I love leaning on Progresso Recipe Starters to help me out during the week. I can make an awesome, flavor-filled meal with just one pouch. 

One of my husband's favorite meals is chili so this recipe is on his short list of items he requests weekly. I don’t mind because it doesn’t take me long to make, the clean-up is a synch and it’s quite delicious!

Chicken Taco Chili Mac
Start by browning ground chicken in a pot. Then add in the Fire-Roasted Tomato Recipe Starter–along with other delicious ingredients like kidney beans, taco seasoning and diced tomatoes. Browned ground chicken
After that gets going, add in some additional water and bring to a boil. Then throw in elbow pasta, pop the lid on and let it simmer away. That’s when the magic happens. About 15 minutes later, the flavors have beautifully come together, the sauce has thickened, and the pasta is perfectly al dente. At this point, season to your liking, turn off the stove and let it sit and meld together a few minutes more. After it’s ready, get ready to pile on perfect toppings galore! I love to have fun by adding traditional taco toppings like salsa, cilantro and, of course, cheese! Try this out one night when you think you have no time to make dinner. You will be surprised how quick and easy it is to make.
