How to Make Pumpkin Pie

There are plenty of different ways to make a homemade pumpkin pie—but this is the best pumpkin pie recipe around! It’s super tasty and oh-so-easy to make thanks to store-bought frozen pie crusts and a simple, low-effort filling. Unlike other pies, a pumpkin pie can also be made entirely from pantry staple ingredients. Just stock up on pure canned pumpkin and evaporated milk while they’re on sale, and you’ll always have the ingredients on hand for this easy pumpkin pie. No need to make a trip to the store!

If you love the taste of pumpkin pie, you’ll probably want to give our Pumpkin Pie Bars a try. These deep dish-style squares are perfect for serving your favorite fall flavors to a crowd. Don’t want to use the oven? No problem! These creamy No-Bake Pumpkin Cheesecake Cups are the most adorable way to get in a double-dose of pumpkin pie flavor.

Does Pumpkin Pie Need to Be Refrigerated?

Leftovers may be rare with this tasty pumpkin pie recipe, but you’ll definitely want to save any extra servings for later! Pumpkin pie has an egg-based custard filling and should be stored covered in the refrigerator—don’t leave it out on the counter. You can safely store your leftover pumpkin pie in the refrigerator for up to 4 days.

Can I Freeze Homemade Pumpkin Pie?

Have a ton of leftover pie that you won’t eat in the next few days? If absolutely necessary, you can freeze a baked pumpkin pie—but we wouldn’t recommend it, as the texture of the crust and the filling may not hold up. If you still want to freeze your homemade pumpkin pie, wrap it tightly in plastic wrap or foil and freeze for one or two months max. To thaw, place the pie in the fridge overnight and serve it the next day.

Ingredients

Steps

  • 1
    Heat oven to 425°F.
  • 2
In large bowl, beat sugar, pumpkin pie spice, salt, pumpkin, evaporated milk and eggs with wire whisk until well blended. Place frozen pie crust onto cookie sheet. Pour filling into pie crust. Place filled pie crust on cookie sheet into preheated oven.
  • 3
Bake 15 minutes. Reduce oven temperature to 350°F; bake 40 to 50 minutes longer or until knife inserted near center comes out clean. Cool on cooling rack at least 2 hours. Serve or refrigerate until serving time. Store in refrigerator.

Tips from the Pillsbury Kitchens

  • tip 1
Pumpkin pie spice is a balanced blend of warm (a reference to seasonings that make us feel warmer—and sometimes cozier) spices that come from dried barks, roots, seeds, or chiles. Cinnamon, ginger, cloves, and nutmeg are important players, though every commercial blend may vary in the ratio of ingredients. Try it with sautéed apples, sprinkled over a pan of roasted root vegetables, or rubbed over a pork roast before cooking.
  • tip 2
Read the canned pumpkin label carefully to make sure you’re not buying canned pumpkin pie mix, which already contains sugar and seasonings.
  • tip 3
Pouring a liquid filling into a pie crust, and not spilling as you place the pie on the oven rack can be tricky. We found that placing the frozen pie crust on the cookie sheet first before pouring in the pumpkin filling helps to prevent spilling when moving both to the oven.
  • tip 4
Serve each slice with a dollop of whipped cream! Want to make your own? Simply beat together in a chilled medium bowl a 1/2 cup of whipping cream, 1 tablespoon of sugar and 1/4 teaspoon of pumpkin pie spice on high speed until soft peaks form.

Frequently Asked Questions

What Are the Best Toppings for Pumpkin Pie?

Pumpkin pie tastes great on its own—but adding a little something extra on top never hurts! If you’re a fan of sweetened whipped cream, try beating together whipping cream and sugar with a mixer until soft peaks form. Add a ring of whipped cream swirls around your homemade pumpkin pie, and sprinkle with some pumpkin pie spice for a presentation that rivals your favorite bakery-made pie.

Prefer something crunchy? A generous sprinkling of homemade streusel topping might be more your style. Or, try adding some pecan pie filling from our Pecan-Pumpkin Pie to complement the creamy goodness of the pumpkin filling. For something classic, gooey and ultra-decadent, we love adding lightly toasted marshmallows. Whether you add toppings or enjoy it bare, this easy pumpkin pie will make your taste buds sing!

Can I Make My Own Pumpkin Pie Crust?

The best pumpkin pies have a flaky, buttery crust—and a little shortcut never hurts! A pre-made pie crust is quick and easy to bake with. Our frozen pie crust is extra simple to use, and it always comes out tasting like a made-from-scratch crust. Just pour in the pie filling and bake—no rolling or styling required!

If you want to try your hand at making a homemade crust, our guide to How to Make Pumpkin Pie from Scratch will walk you through it every step of the way.

How Can I Achieve the Perfect Crispy Crust?

When baked correctly, your pumpkin pie crust should be perfectly crispy—nobody wants a soggy, doughy or overbaked crust! To avoid over-baking the crust edges, try adding some aluminum foil over the edges about halfway through the bake time. To ensure a crispy crust, make sure your oven rack is placed in the center of your oven. You should also check that your oven temperature is accurate and not running too hot.
