STEP ONE: BREAK UP COOKIE DOUGH

Remove the cookie dough from your refrigerator and let it sit at room temperature for ten minutes. Add it to a large bowl; using hands, break it up into pieces.

STEP TWO: MIX COOKIE DOUGH

Add eggs, flour and green food coloring to the bowl. Beat the ingredients together on medium speed until they’ve blended together.

STEP THREE: MAKE COOKIES

Put dough into a resealable plastic bag; cut off one corner of the bag. Pipe the cookie dough in 1 1/4-inch rounds onto baking pan. You’ll have 68 cookies in total. Bake cookies 8 to 10 minutes or until cooked through (but still soft enough to bounce back into shape when touched).

STEP FOUR: ADD FILLING

Transfer the cookies to cooling racks; allow to cool for 30 minutes. Add the ready-to-spread frosting to a resealable plastic baggie; cut off one corner of the bag. Spread frosting onto 34 cookies; add top with remaining cookies to frosted cookies to make a sandwiches shape.
