Peanut butter and chocolate are an awesome food combination. The salty peanut butter mixed with the classic richness of the sweet chocolate is a perfect marriage, and this cookie sandwich brings them together in perfect matrimony.
But what you’ll love most about this recipe is the five-minute buttercream. It’s a cinch to whip up, and it adds just the right touch to the already easy-to-bake peanut butter cookie dough. Try it yourself! Now excuse me while I continue to eat what’s left of the pan.
Place chocolate chips in a microwave-safe dish and microwave for 30-second intervals and mix together until totally melted and smooth. This process usually takes one minute total in my microwave, but they tend to vary. Set aside and cool.
While the chocolate cools, bake all the cookies according to package instructions and allow them to cool.
Next add cooled melted chocolate and cold butter to an electric mixer and beat on a high speed until everything has mixed together with no lumps remaining. Add in cocoa powder next, and continue to beat until a fluffy buttercream consistency has formed.
Frost 12 of the cooled cookies with the buttercream and place unfrosted cookies on top. Serve and enjoy.
