Share Your Favorite Slow Cooker Recipes!

When I'm planning ahead for the weekly dinners, I try making at least one meal a slow cooker night. I love that I can throw things in my crock pot before I leave for work and I can come home to a great smelling house and yummy meal! With that, I'm always looking for new recipes- so please share your favorite!

I made this two weeks ago and already the DH asked if I could make it again. (You know it's a winner when...)

Chicken Tortilla Soup in the Crock Pot

SERVES 8

  • 4 chicken breast halves

     

  • 2 (15 ounce) cans black beans, undrained

     

  • 2 (15 ounce) cans stewed tomatoes
  • 1 cup salsa - I used medium salsa for some kick.
  • 15 ounces tomato sauce
  • tortilla chips
  • 1 cup shredded cheese

Directions

  1. Combine everything except chips and cheese in crockpot. Cook on low for 8 hours.
  2. Before serving, remove chicken and cut into bite size pieces. Put chips in bowls, top with soup and sprinkle with cheese. (But it is also good straight.).

The absolute easiest thing I do in a slow cooker is drop some country pork ribs (boneless) in the slow cooker along with sliced onion. Top with some purchased barbecue sauce (I like Sweet Baby Ray's Honey Barbecue Sauce) and I'm off to work.   On my way home, I'll pick up some good sandwich rolls, and everyone enjoys a delicious BBQ pork sandwich for dinner. I also like this with chicken thighs.  Talk about easy!

OMG!  I love this recipe. I've got a butternut squash on my countertop right now that will soon be soup.

My favorite slow cooker recipe is pork loin with some thyme and onion soup mix with about a inch of water in the bottom. I let it cook all day on low. I will serve this with mashed potatoes, corn, and applesauce.


The next day I will shred the leftover pork loin and put BBQ sauce over the pork.  I will cook this until it is hot and serve on buns.  My picky eaters are first to the table when I make it.

I love my slow cooker!!  One of our favorites is BBQ Chicken.


1 1/2 lbs boneless chicken


1 chopped onion


1 chopped pepper (red, geen, whatever you like)


1 diced jalapeno


1 cup canned tomato sauce


1/2 cup ketchup


2 tbls brown sugar 


2 tblsp vinegar (I use red wine)


garlic salt


Put everything in the slow cooker 3 - 4 hours on high or 7 - 8 hours on low.  We like to make sandwiches or put it over rice to get the sauce.

This is easy to make and great during the winter. I call it comfort rib dinner.

1 quart of sauerkrat (drain into collander, sqeeze out the liquid, rinse & repeat at least 4 times)

1 large onion finely chopped

3-4 pounds of country ribs remove the fat

2-12 oz cans of beer

1. place part of the saucerkrat on bottome of crock pot, enought to over, then some diced onion & some caraway seed, place seasoned ribs on top, only I layer of ribs.

2. Repeat step 1 until you have about 2 inches from the the top.

3. Pour beer over the top.

4. Cover & cook on high 6-8 hours.

I serve this in large bowls with a good bread or dinner rolls. When you take the ribs out of the crock  pot the meat will fall off the bones.

(This is finger licking good and I very seldom have any left overs) It is better if you do not use light beer.

3 Ingredient dinner!!!

Here's the easiest crock pot recipe I know:

 

1 or 1 1/2 lb. stew meat

1 can french onion soup

1 can cream of mushroom soup

 

Put all three ingredients in the crock pot, turn on low, and cook for 8-10 hours.  Serve over rice. 

Really....it's that easy (you don't even have to brown the meat!!!)
