As
much as I try to preplan meals- there are some nights where I start thinking
about what to make for dinner when I’m on my way home from work.
My
hubby is pretty open-minded on what we can eat… He loves meals that aren’t too
heavy and has some type of protein.
One
thing we can always agree on is some form of egg salad. I love eggs because: 1.
They are inexpensive. 2. They are versatile. 3. They are boiled and peeled in
12-ish minutes. 4. It doesn’t overheat the kitchen on a hot day.
Now
I usually mix in some mayo, dill relish, salt, pepper in my egg salad… but I am looking for ways to make it more interesting.
