Re: What’s Your Go-To Summer Dinner?
Hi Cate, I finally did the breadstick swords...tried to post here but no luck. Check out my recipes though, I managed to put it up there. I've been having bad luck with the site lately(keep getting the blushing doughboy redundant posts or no post at all).
Anyways, for a Go-To Summer Dinner I recall eating quesadillas in swimsuits or terry robes after swimming, so I guess that's my go to. It takes only minutes and can be adjusted with more or less ingredients for however hungry, tired or hot you are. Fruit salsa's are easy to throw together due to fresh mango's, peaches and strawberries for variety from traditional tomato and chile salsa's. So many meats can be thrown in from rotisserie chicken, to deli meats, to leftover carne asada to make a filler upper quesadilla. We use a traditional flat cast iron pan called a "comal" for fast even heating and toasty results without adding fat. Electric grills also keep ambient heat to a minimum and gets you in and out of the kitchen fast. Here's the handiest "different" version that we tried with on-hand inexpensive ingredients almost anyone has at anytime: Corn tortillas, American cheese, & jar jalapeno's (chopped)... Yummy with a cold beer. A milder creamier version flour tortillas, monterey jack, pan fried with a tiny amount of butter, served with sour cream (good with Chardonnay but not good for bikini's ha ha). Health "Nut" version, whole wheat tortilla, grilled onions, a little bit of a nutty or sharp cheese like white cheddar. Dip with simple vegetarian chile replacing meat with nuts you can do this fast with canned chili beans and say whole pecans or walnuts to your tastes. Stay cool Cate!
p.s. Oh! One more tip I once read in a wedding magazine, running cold water over your wrists cools your whole body by lowering your blood temperature at your pulse points, it works for me and I can do it while in the kitchen.
