I need some easy, semi healthy recipes.  I am really bored with my recipes and I need to make my menu and grocery list.  [8-)]

I have a great recipe for an easy bar cookie.

OATMEAL  BARS
Preheat oven to 350.  Use 9X13 pan no need to grease

4 cups of oatmeal (does not matter if it is the 1 min. or 5 min kind )
2 sticks of butter softened, not melted
1 1/2 Cup brown sugar
Mix butter and brown sugar together.  Mix in oatmeal.  Mixture will be crumbly.
Press mixture into pan.  Bake for 15 min until light golden but watch because with the color of the oatmeal and brown sugar it is brown to begin with.
Cool.
While base is cooling get the topping ready:
1 pound of semisweet chocolate (can use sweet but I think it is too sweet)
1 cup peanut butter
Melt together and stir until smooth.
Spread over cooled cookie base.
Cut into serving sizes and enjoy.  These freeze very well.
If you are like me and a chocolate peanut butter lover these are dangerous to have around

I am looking for good recipes that are quick but filling. I would like any bread recipes that you might have also. I love to cook but don't always have lots of time as I babysit my 2 grandsons every day. I also homeschool one of them. So if you can help I would appreciate it. Thanks

I have a recipe that is easy and great

Doris' Dutch oven potato casserole

3 large baking potato's

3 slice white american cheese

1 1/2 to 2 cups shredded cheddar cheese

1/4 cup milk

1 small can of French's fried onions - reg. flavor (use to be called Durkee's)

Preheat oven to 400 degrees

Wash and scrub potato's but do not peel. Cut in half and slice about 1/4".

Boil for 15 minutes or until tender in dutch oven pot and drain.

Put back in pot and season with salt and pepper. Cut cheese slices into strips and place over potato's. Sprinkle cheddar cheese on top and pour milk over the whole thing. Cover and place in oven for 15 minutes. Remove, stir and top with crushed fried onions. Place back in oven un-covered for 10 to 15 minutes or until lightly browned. Let stand about 5 minutes and enjoy.

This is also good with small red potatoes and you can use different cheeses for a variety of flavors.

Approx. 4 servings. In my house that means 1 for me and 3 for my husband. This is his favorite side dish.
