Does anyone have a good eggplant or chicken parmesan recipe? I've tried a few different ones and I can never seem to get it as crispy or breaded as they do in restaurants! Any tricks?

Are you dipping the eggplant in egg before you dip in your bredding mixture? If so maybe you don't have your oil hot enough when you cook it.
