Looking for a recipe made with a lemon cake mix.

Hi,  I'm new to the site as far as discussions.  I've enjoyed many of the recipes.  I remember eating something at work one day called:   "Chess Squares" and they were GREAT!!  I think they had vanilla flavoring, Lemon cake mix and were probably a half inch thick.  I know they were crunchy on top and had powdered sugar on top of them.  Can anyone help me find this?  Thanks....

Hi Cathy, I'm not sure if this is what you want, but it is delicious. 

GOOEY CAKE

1 stick butter-room temperature 

1 beaten egg-room temperature

1 yellow cake mix-but lemon or other flavors work just as well

mix well.  Pat in an 9 x 13 inch pan, sprayed with cooking spray.  You will need to use your hands as this is very thick.

 8-oz cream cheese-room temperature

2 beaten eggs-room temperature

1 box powdered sugar

Beat well and pour over the above mixture.  Bake 350 degrees for 35 to 45 min.  My oven is off so it takes me up 1 hour.  The top should be slightly golden brown and have cracks. 

I made this just a couple of weeks ago but had a large can of crushed pineapple in the cabinet I wanted to use up and a partial jar of marchino cherries in the frig left from New Years.  So I chopped the cherries fine, drained them and the pineapple REALLY WELL, added a cup of choppeed pecans, and placed on the cake mix layer before pouring on the cream cheese mixture. I also added a teaspoon of almond flavoring to the cream cheese.  Everyone raved.  I later wished I had added a cup of coconut to the fruit mixture.  Will try that next time.  Hope this helps you out.  ldbayou

Hi idbayou, the recipe sounds good. I am not much on cooking, how long would you leave the eggs and butter out to get room temperature and still be safe to eat.  thanks for the information

I have made this cake.  Very good, rich but good. 
Just leave the creamcheese out for about 15-20 minutes.  You want it soft enough to beat so it is smooth.  The eggs you can take them out just as you are gathering your item together.  Or take them out when you take out the cream cheese.
The origional recipe you are looking for is more like the lemon squares or lime I have seen.   There is a shortbread base and a middle layer of a filling and the top is generally sprinkled with powdered sugar.
Here is one I found.
Lemon Layered Bars
Crust:
1 package lemon cake mix(18.25 ounce size)
1 egg
1/3 Cup butter
Filling:
2 eggs
2/3 Cup granulated sugar
2 tsp lemon zest
1/3 Cup lemon juice
1/2 tsp baking powder
1/4 tsp salt
Preheat oven to 350  Grease a 13X9 inch pan
Crust:  In a large mixing bowl, combine cake mix, egg and melted butter.  Beat on low speed until well blended and crumbly.  Reserve 1 Cup of the mixture for topping.  (see note below)
Press crumbs into pan  Bake for 12 to 15 minutes or until light golden.

Filling:  In a small mixer bowl, combine eggs, sugar, lemon zest, lemon juice, baking powder and salt.  Beat on medium speed until light and foamy.  Pour over warm crust.  Sprinkle reserved crumb mixture on top.  Bake for 15 to 20 minutes or until set.  Dust with confectioners sugar.
Cool completely in pan on wire rack.  Cut into bars.
You can replace lemon juice with lime juice.

Note:
I have had this made with no reserved crumb topping and just dusted with powdered sugar.  Both good depends on what type of topping you like.

You can also search for "Pecan Pie Bars"  That also has the type of filling that I think you are refering to.  Not sure if they are on this site or http://www.verybestbaking.com you could also try Betty Crocker site if you can't find them on this site.
