Choco Chewy Scotch Bars - Need Recipe

This recipe was in one of the paperback Bake-Off books over 25 years ago. My mother and I made them for my wedding and for many Xmases and weddings after that. I was looking tonight for the recipe to give to a friend and I can't find my book anywhere. If anyone has this recipe, could you please send it to me at **********************.  It is a bar cookie recipe with chocolate, butterscotch chips and I think coconut in it. I think you made 2 types of batter and the dropped spoonfuls of one on top of the other in a 9 x 13 pan.

Re: Choco Chewy Scotch Bars - Need Recipe

This recipe was in the PBO Book # 20th Bake off - 1969.  It does not have butterscotch chips - has semi-sweet chocolate .. perhaps you and your mother had a revision (I know I make a lot of changes in recipes).  However the title is 'right on'!

CHOCO-CHEWY SCOTCH BARS

1 package (12 oz ) or 2 cups semi-sweet chocolate pieces

1 can (15 oz) sweetened condensed milk

2 tablespspoons butter or margarine

1 cup butter or margarine

2-1/4 cups (1 lb pkg) firmly packed brown sugar

2 eggs

2 cups Pillsbury all purpose flour

1 teaspoon salt

1 teaspoon vanilla]1/2 cup chopped pecans or walnuts

1/2 cup flaked coconut

Preheat oven to 350 degrees F.

Over boiling water, melt chocolate pieces with condensed milk and 2 tablespoons butter; blend until smooth.  Set aside.

In medium saucepan, melt 1 cup butter.  Add brown sugar and egg;mix well.  Blend in flour, salt, vanilla, pecans and coconut; mix well.   Spread half of dough in ungreased 15 x 10 inch jelly roll pan.  Drizzle chocolate mixture over dough in pan.  Dot top of chocolate mixture with remaining brown sugar dough.  Swirl slightly with tip of knife.  Bake at 350 degree F for 30 to 35 minues until golden brown.  Cool; cut into bars.

About 48 bars
