high altitude red velvet cupcakes with filling

help...my 8 yr old for her party wants these...googled everywhere and can find homemade recipes for high altitude red velvet cupcakes (and of course can just use a pillsbury cake mix)- but none that include a filling..any ideas?

Would you consider Red Velvet Whoopie Pies? They have a filling and you can see both the beautiful red and yummy filling.
