new cheesecake

was wanting to find out if anyone has a receipt for a killer cheesecake. The one i have is what is on the back of cream cheese package and this holiday i wanted to try something reaaly different. So if anyone has a differenrt idea or something crazy-i'm willing to give it a try.  I'm not a pro just someone like you playing around the kitchen trying to have fun

I have a recipe my Great Aunt had for a no bake cheese cake. Everyone who has tried it has liked it (including someone who dosn't like cheese cake).

1 pkg lemon flavored gelatin; 1 cup boiling water; 3 TBSP Lemon Juice; 1 - 8oz or 3 - 3oz pkgs of cream cheese; 1 cup sugar; 1 tsp vanilla; 1 can CHILLED carnation (Evp. milk) whipped; 1 lb graham crackers; 1/2 cup butter or margarine melted.

Dissolve gelatin in boiling water. Add lemon juice. Cool. Cream together cheese, sugar and vanilla. Add gelatin, mix well. Fold whipped carnation into gelatin mixture. Crush graham crackers into fine crumbs and add melted butter. Firmly pack two thirds of mixture into bottom and sides of a 9x13x2 inch glass dish. Add filling and sprinkle with remaining crumbs. Chill several hours. Cut into squares. I find the colder the evap. milk is the better & easier it whips and the higher the cake will be.

 You may have made it already, but I just made this for Thanksgiving and it is hands down the best cheesecake I have ever made. I make it ever holiday and everyone looks forward to will need the large spring pan for this. I only use brand name ingredients.

1 lb cottage cheese (small curd)

1 1b cream cheese

1 1/2 cups sugar

4 eggs

juice of 1/2 lemon 2(tlbsp)

1tblsp vanilla

3 tblsp corn starch

3 tblsp flour

1/4 lb melted butter

1 pint sour cream

Preheat oven to 325 degrees 

Put cottage cheese, cream cheese in mixer, mix until smooth. Add eggs, sugar, lemon juice, vanilla, corn starch, flour (I sift the starch and flour together and add) and melted butter. Fold in sour cream gently. Pour into spring pan.

Bake 1 hour in 325 oven. Turn off oven. Leave cheescake in  for another hour.  Do not open oven for full 2 hours. Cool and refrigerate. Top with whatever
