Double Crust Peach Cobbler

My grandma used Pillsbury Pie Crust & canned peaches to make a delicious double crust cobbler. Can anyone help me with a recipe and directions, please?

Hi Boilermaker, let me guess, a Purdue fan? [:D] I found a few recipes that you may enjoy.  You can tweak them to make them more true to your grandma’s delicious recipe …

This is a family favorite recipe from my Nana... Delicious!! Hope you enjoy it as much as we do. [:P]

 

DOUBLE-DECKER PEACH COBBLER

8cups sliced fresh peaches (or 3 LARGE cans sliced/drained peaches)

1/2 cup white sugar

1/2 cup brown sugar

3 Tblsp  AP flour

3/4 tsp cinnamon and 3/4 tsp nutmeg (add a dash of cloves if you like them)

1 tsp vanilla

1/2 cup of BUTTER

pastry for a double crust pie

  Preheat oven to 475*F

1) Combine peaches, sugars, flour, and spices in large pan or dutch oven. Set aside for approximately 15 minutes to allow syrup to form; then bring the peach mixture to a boil.

 2) Reduce the heat to low, add the butter and allow to simmer for approximately 15 minutes, or until peaches are tender. Remove from heat and add vanilla.

3) Roll 1/2 of the pastry to 1/8" thickness and cut to fit a 3 quart or larger buttered baking dish.

4) Spoon half of the peach mixture into the bottom of the buttered dish. Add the rolled layer of pastry to fit dish.  Bake this layer for approximately 10-12  mins to keep the pastry from being too doughy later.

5) While the first layer is baking, roll out the other 1/2 of the pastry to the same size.

6) When the first layer is baked to a pale golden appearance- then remove from oven and add the remaining peach mixture. Top the cobbler with the remaining pastry (either as a whole crust or cut into lattice strips). 

7) Brush the top crust with a thin layer of milk, or beaten egg, or even melted butter to aid browning. Sprinkle a small amount of sugar over that to add sparkle. Bake at 450-475*(depending on oven).Bake for 15-20 minutes or until browned. Allow to cool slightly before serving.

***Serve with vanilla ice cream if desired.   ***Makes approx 8 servings.
