Here in naples italy we cant always find what we need to cook with.Last week i wanted some canned pumpkin mix that they did not have so i bought a pumpkin. When i got home i did a web search to find how to make a pie from scratch and found that pumpkin (the halloween icon) is not the best thing to use for a pie, for the best results use a long island cheese squash. I just happened to have one that was given to my wife by an italian friend so i used it to make a pumpkin pie and a pumpkin cheese cake and they were the best i have had in a while. PS the pumpkin did make a nice jack o lantern.

Sorry but i used what is called a cheese squash , the sugar pumpkin is another breed.The cheese squash has firmer flesh and a tan outer surfase.
