I usually bake a pie once a month. My family calls me the baker of the family as I am always baking something. I bake at least 4 times a week. It could be just cookies, a cake, or a pie. When I do pies they are always from scratch except for the crust, I never could get they crust right. But the fillings are alway scratch. I must say that I make more pies from Thanksgiving to New Years day tho.

As a teenager I did a summer stint as a pie maker.  I'd start at 5 am and have 60 pies baked and ready to take to drug store fountains (the precurser to Micky D) by 9 am.  We used lard in the crust and it really does make the flakiest, but oh, the saturated fat!   I never outgrew my love for pies and every now and then have a "pie supper" where every part of the meal is in a pie shell.  Even had a potluck with friends not long ago, where everyone brought a main dish, veggie or dessert pie.  Fun to see the variety.  In the interest of full disclosure:  now I use refrigerated pie shells  [8-|]

I rarely bake a pie because of the calories.  However, holiday time I usually bake pies and sometimes use lard in the crust.  Yes, it makes the best crust---but not good for either my husband or myself---or anyone else.

I grew up in a family with not one, but two caterers - my aunt and uncle had a catering business; and my paternal grandmother had a catering business.  You'd think with a family full of GOOD, GOURMET cooks, I'd be pretty handy in the kitchen, but I HATE cooking - unless I have at least 10 people to cook for!  I didn't learn the skills and had no talents for cooking, but I did learn more than average; I especially learned about the are of PRESENTATION - making even the simple seem supreme by way of how you dress the table, buffets, counters and most importantly, the food!  If it LOOKS good, that helps it taste even better than it really is!  I do love baking pies and breads.  I tend to do more of my baking in November - February because that's the time of year I have to find something to do in the house because it's too dark to be outside!  I often make extra pies and breads to freeze so they'll carry us through the summer, until at least July.  Once harvest season starts again, then basically so does my baking.  But, I've also learned from my family of cooks:  don't spend the HOLIDAY cooking and cleaning!  Do all the major baking and preparations the weekend and day BEFORE holidays so that ON the holiday, all you're doing is WARMING or CHILLING things.  That gives you more time to spend lounging or with guests rather than spending the holiday cooking.  Holidays should be about time with friends and family - not cooking and cleaning all day.  Save the clean-up for after guests leave - the dirty dishes can wait until the next day, but your guests are only there for a short time.

Rusty, that is such a great idea to freeze pies so that one has them even during the warmer months. I too love baking in the winter when you don't have much playtime with the short daylight hours!  I have a question: do you bake the pie ahead of time and then just thaw, or partially bake before freezing, then finish up in the oven the remaining bake time? thanks for the great tip.  I do this with banana bread.  I never throw away a black or brown banana. I make banana bread even if I don't intend to use it right then and throw it in the freezer.  I can take it out at a moment's notice, or if someone drops in, I can give it to them.  quickbreads freeze so well and have a right-out-of-the oven taste.

I love to make pies when we have our friends over for dessert and playing cards.  During the winter months, I like fruit pies and during the warm months, a refrigerated pie with puddings and cool whip.

I usually make the pumpkin pie or a warm dessert at our daughters house for Thanksgiving.  I guess pumpkin pies remind me of my mother at holidays when growing up.  Lots and lots of memories.

My favorite time to bake a pie, is anytime the urge hits me, I love to cook! And am a Food Network junkie, I do like baking pies in the winter, and sometimes make Quiche as well, but I make all kinds of desserts the rest of the year, and I like to get the premade pie crusts Marie Callendar is one of my favorites, no good at the pie crusts, but make the fillings from scratch too!

Actually, I bake pies all year long.  When any fruit that we love is in season, I bake!  Yummy.
