Valentine's Day

Valentine’s Day falls on a Saturday this year. What you are making (and what are the recipes)? 

What are your entertainment tips that makes this holiday memorable?

Afterwards- how did it go? 

I’ll post mid this week on what I made for the holiday.

Valentines Day with my love one(s).

My extended family was over and I decided to celebrate Valentine’s Day a little early.

I made:

Appetizer: A homemade batch of guacamole

 What you need: 

2-4 ripe avocados (This means when you go to the store they should be able to squeeze a little bit. . If it’s hard it may need a few days still… if it’s really soft it could be brown on the inside).

1-2 tablespoons of lime juice (or the fresh juice of one medium lime)

Couple shakes of sea salt, and ground pepper.

1 diced tomato

1 tablespoon of diced garlic (or a couple shakes of garlic powder)

1 handful of cilantro. (off the vine, washed and torn)

¼ of a cup of red onion, green onion.

 

Directions:

Cut the avocados in half, Scoop out with a spoon, and place in medium bowl.  With two knifes, cut the avocados into chucks. Add lime juice, sea salt, pepper, tomato, garlic, cilantro and onion. Continue to use the two knifes to cut and mix the ingredients. Texture should be chucky. Serve with your favorite tortilla chips!

 

Main: Shrimp tacos (which I though looked classier than beef/turkey/chicken)

·      I took my heart cookie cutter and put the rice through for a fun “love shape. Put some cilantro around it.

I wrote my reviews and tips in the review sections.

That defiantly made leftovers (we had four people). And I know my hubby loves leftovers… It’s like the Valentine’s gift that keeps on giving.

I will make something later on this week for the work place and share with you.

Cate, I saw your recipe for the guacamole.  Except for the cilantro ( I hate the stuff) it sounds great.  When I don't have all the stuff for a guacamole or the tomatoes are not good I just use some salsa.  It has the tomatoes, onions some salt and all I add is some lemon or lime juice to the avacado when I am mashing it up.  Almost instant guacamole.  And who doesn't have salsa and chips around when you are making gucamole?
May have to duplicate your meal for May 5 th.

Haha. That is so funny- cilantro is one of those things people either love or it or really dislike it!

Made these for the coworkers today. :)

The perfect treat with your afternoon coffee. Heard all good things from my coworkers except- One male coworker said, "I don't do pink sprinkles"- Ha, ha. :) Ahh well, can't please them all.
