Re: pie for christmas

Here are two recipes that might be helpful:

http://www.tablespoon.com/recipes/cranberry-mincemeat-apple-pie-recipe/1/

  • 1  (15-oz.) box Pillsbury® Refrigerated Pie Crusts
  • 1  teaspoon flour
  • FILLING
  • 1  cup prepared mincemeat
  • 4  cups peeled, thinly sliced apples
  • 1  cup cranberries, coarsely chopped, well drained
  • 1/2  cup sugar
  • 2  tablespoons flour
  • 1/2  to 3/4 teaspoon grated orange peel
  • 1/4  teaspoon allspice
  • 2  tablespoons butter
  1. Heat oven to 425°F. Prepare pie crust according to package directions fora two-crust pie.
  2. Spoon 1 cup mincemeat in pastry lined pan. In large bowl, combine apples, cranberries, sugar, flour, orange peel and allspice; toss lightly. Spoon over mincemeat layer. Dot with margarine. Top with second crust and flute; cut slits in several places. Bake at 425°F. for 30 to 40 minutes or until apples are tender. Cool at least 1 hour before serving.
  • Pastry for Two-Crust Pie
  • FILLING
  • 1  (28-oz.) jar (3 cups) mincemeat
  • 1 1/2  cups chopped, peeled apples
  • 1/3  cup chopped nuts
  • 1  tablespoon lemon juice
  • 2  teaspoons grated lemon peel, if desired

  1. Prepare pastry for Two-Crust Pie using 9-inch pie pan.
  2. Heat oven to 425°F. In large bowl, combine all filling ingredients. Spoon into pastry-lined pan. Top with remaining pastry; fold edge of top pastry under bottom pastry. Press together to seal; flute edge. Cut slits in several places in top pastry. Bake at 425°F. for 35 to 45 minutes or until golden brown.
Hope these help! Sincerely, Cate
