Getting Creative With Ham Leftovers

Easter is right around the corner! I love being around family and enjoying a big meal. [:)]

In my family we end up having the classic kielbasa and ham as the main meats and have plenty of sides. I love making sandwiches with the left over Pillsbury rolls the next day (with a little lots of mustard!)

Which brings up the question: How do you get creative with your ham leftovers?

What are you making with your left over Holiday Ham?

1.     Breakfast and Brunch the next day! i.e Ham and eggs and biscuits (oh, my!).

2.     Lunch: i.e Ham Sandwiches  

3.     Diced up for a big pot of soup or stew

4.     Dinner: i.e. Baking it in a pasta or casserole 

5.     Other! (Share your recipes with us)

Holiday Ham on Day Two: How are you using it?

i think ham in augratin potatoes sounds yummy. or maybe the boys monster burger recipe:

calls for ham, bacon, fried eggs (yolk hardened), toast, ketchup, mustard, mayonaise or ranch, cheddar or monterey jack cheese, and chili if desired. just fry up all your ingredients and start stacking your burger. is delicious!

I like to chop it up and mix it into omelets or maybe top some "breakfast pizzas" with it! I'll also probably make up a batch of soup to put in the freezer.
