I wanted to give myself this challenge to add a canned tomato recipe to the site. And luckily I found the perfect inspiration this week!

My high school friend is moving to Chicago and is apartment hunting. Until then, he’s staying with my husband and me. He comes from a family of insanely talented Italian scratch bakers.  Though I’m not trying to compete, I still like to impress him with my cooking skills. 

I’m planning on making a canned tomato recipe tomorrow night. I bought some beautiful portabella mushrooms to use somehow in this new dish. I’ll share the review and the recipe on Thursday.

My friend was impressed and so was my husband. [:)] I don't often cook with portabellas, for I forget how easy they are to cook, that I really should buy more.

The Muir Glen tomatoes are on our pantry shelf -- and we use them often.  Just not during 'FRESH' tomato season!

Right now we're having raw tomatoes, fresh mozzarella, basil (etc.) w/ pasta.  Its nice only to have to cook pasta .. not the sauce.  Another w/ raw arugula, raw tomatoes, herbs bit of oil and hot cooked pasta.  Salads with fresh mozzarella, tomatoes, basil.   Grilled sandiwh with the same on good artisan bread (put the basil in AFTER you grill them!  Wonderful change from a grilled cheese!   Gazpacho.  and on and on.   

I'm sure my canned tomatoes get very lonely in the summer... but I'll be back to them when fresh tomato season is over!!!!
