Dry Coconut Pecan Frosting Mix

My mother used to make the best cookies, combining a Pillsbury boxed cake mix and a dry mix of Coconut Pecan Frosting.  We're having a big gathering this year and I would love to recreate her cookies, but don't know what to substitute for the frosting mix.  The canned frosting adds way to much moisture to the cookies.  Can anyone help?

omrhill --- perhaps this will help you.

 

I think Pillsbury stopped making the dry frosting mix (coconut pecan and coconut almond) around  1971 or '72.   However, that year one of the top winning recipes at the pbo used the product - and since it was not available every where they put this in after the recipe as a substitute if the dry mix could not be found:

 

"If frosting mix is not available, combine 1 cup coconut, 3/4 cup firmly packed brown sugar, 1/2 cup flour; cut in 1/2 cup butter or margarine."

 

I've used that mixture with success a few times over the years.  Hope it will help you. 

 

If Cate/Pillsbury or other Pillsbury is reading this .. I just spent about 30 minutes trying to find a previous request/posting - someone had requested the frosting (which was baked on the cookie) from the 20th PBO ... it used this dry mix.   And I had responded to that query - about 1 to 1-1/2 months ago.   It has completely disappeared.  Do some posts with responses just go off into the atmosphere?

We too loved these cookies. With regards to the frosting, this is it

1cup Chocolate Chips

1/2cup Eagle Brand Condenesed Milk or equal

1/4tsp salt

1tsp Vanilla

Melt and mix Chocolate and milk over low heat

and salt and Vanilla mix well

Thank you Mary for this substitute for this icing.  I've been trying to find something that would help me make a chocolate bar with coconut pecan icing, but to no avail could I find the box icing.  This is a very old receipe that I have from a long ago Bake Off and I've not been able to make it for years.  Now I can bake this bar for the ladies who work for me in the Admitting Department and Business Office at the hospital where I work.  Thanks again!

I also had a recipe calling for this frosting mix.  I went to numerous stores and no one had even heard of it before.  I went searching and found the perfect substitute at: http://www.cooksrecipes.com/cake/coconut_pecan_frosting_mix_substitute_recipe.html It worked great in my recipe without the extra margarine since the recipe called for margarine.  Hope it works for you!
