When you are entertaining quests time spent in the kitchen is very important. This is a great recipe to make the night before and all you have to do is put it in the oven. Now you have extra time to have a cup of coffee and chat with your guest.
BREAKFAST CASSEROLE
Mmm mmm good! This is a must do for every holiday in my household, or just when you have guests overnight!
Makes 8 servings
Preparation Time: 20 Minutes
Cooking Time: 30 Minutes
1 pound bacon, cut into pieces or 1 pound sausage
1 green bell pepper, chopped
1 onion, chopped
1 package frozen hash browns
8 eggs, beaten
6 slices bread, broken
2 cups cheddar cheese
1 cup milk
1 (14.5 ounce) can RED GOLD PETITE DICED TOMATOES with GREEN CHILIES or RED GOLD PETITE DICED TOMATOES MEXICAN FIESTA
In mixing bowl combine eggs, bread, cheese, milk and RED GOLD DICED TOMATOES with GREEN CHILIES. Add browned meat mixture and pour into greased 13x9x2 inch baking dish. Cover and refrigerator casserole overnight. Preheat oven to 350 degrees Bake casserole for 25 to 30 minutes or until lightly browns.
