'Hash Brown Casserole'

Hash Brown Casserole

I tried this on Christmas morning.  It was a huge success but way too much for just my husband and myself.  Next time I make it, I will half the recipe.

 6 large eggs, well beaten

1 can (12 oz) Evaporated Milk

1 tsp salt

1/2 tsp. black pepper

1 package (30 oz) frozen shredded hash brown potatoes

2 cups  shredded chedder cheese

1 med chopped onion

1 small green bell pepper, chopped

1 cup diced ham.

Preheat oven to 350 degrees, Spray a 13 X 9 Pan with cooking spray.  Combine eggs, evaporated milk, salt, pepper in a large bowl, wisk.  Add potatoes, cheese, onion, peppers and ham, mix well.  Pour mixture into prepared baking dish.  Bake for 60-65 min or till set.

 

This is great served with sausage or bacon, your favorite muffins and fresh fruit.  Perfect for that Sunday brunch!

I love this recipe! The recipe I use calls for a container (8 oz) of sour cream. I'll be using yours (with some very slight modificationsSmile)from now on as I'm trying to reduce our fat content in our diet. Thanks!

If you put those ingredients on top of the refrigerator crescent rolls...MMMM it is so good! and easy!


My family gobbles it right up.  If they don't it's great to warm up for breakfast the next day or if you can wait that long re-heat for lunch or supper.

That sounds fantastic! I will try it :)


Last week before church, I lined an 8" square pan with those Pislbury Cressent rolls. I just rolled them out and didn't pull apart the triangles. I baked it till it was ready. Then I spooned in:


6 eggs well beaten cooked in a miripoise that has been cooked down a touch.


add 1/2 lb. Jimmy Dean hot sausage (I"m from New Orleans) already cooked and drained.


Spoon the mixure into the pan, sprinkle Rotel diced tomatoes with chilies over the egg mixture and cover with shredded sharp chedder cheese, and put under the broiler till cheese is melted.


My wife loved it.

Wow this looks like an awesome recipe, might try it later this week boise personal training if i have the time to cook, hopefully it turns out good, thank you
