Lasagna for 2

Lasagna for 2

My husband and I love lasagna.  When I make a full 13X9 pan it is a lot of food for the 2 of us.  I had this incredibaly brilliant idea last time I made lasagna and it worked out wonderfuly.
Line 3 or 4 loaf pans, the kind you make bread in, with plastic wrap.  Leave overhang on all sides.
Layer the lasagna in the loaf pans one sheet of lasagna fits perfectly in the pan.  Continue layering just as you always do. 
When you have used all the noodles and all the rest of the ingredients fold over the plastic wrap, pulling up so that you make sure the plastic is not trapped in any folds. 
Freeze the lasagna.  When they are frozen pop the lasagna out of the pans and wrap tightly in aluminum foil or more plastic.
When you want to cook a lasagna pull off the wrapping and pop into the loaf pan and bake.  I have baked from frozen or allowed to thaw over night in the refrigerator. 
This is great for portion control as well.  One loaf pan makes plenty for the 2 of us, a bit larger portion for him and just enough for me.

What a great idea!!!  I will have to give that a try.  Sounds like a quick way to serve up dinner as well.

I am new to freezing food. Is this recipe not cooked before it is frozen?

How does the cheese cook after being frozen?

For me, I don't cook it before freezing. Cheese melts well!

I don't do it either...it's just not the same, however I do freeze the ingredients and the put them toghether when I need them.

GREAT TIP :  NO BOIL NOODLES WORK Perfect and GREAT !  One would never know whether or not you boiled your lasagna noodles.   BARILLA ARE THE ONES I USE.  I CAN say, I feel I MAKE THE FASTEST LASAGNA ON THE PLANET.    Use the Barilla.  Be sure to """always""" use high quality ingredients while making your special lasagna.  This is a 30 min. meal.  Driving and buying the high end ingredients takes more time than making the dish.  Follow the box directions.  It's quick.  Trust me!

I would try to make these from scratch. Just get an inexpensive pasta machine.

Lasagna is even better the next day for some reason

What a unique idea. Wonderful, I love lasagna but only have it when I go to my daughters because I don't like making a big pan and then freezing it. Thank you thank you thank you!

This is such a great idea.  We would always have so many leftovers and we never really wanted lasagna for dinner, then lunch again the next day or dinner the next day.....no fun to eat the same meal over and over again.

I actually did this for a friend who just had a baby ....so I brought them 3 'loaves' of lasagna wrapped in tin foil packages with ribbon and they said the same thing....nice to have 3 meals in their freezer that they can spread out (especially with a newborn).

Hi,   This is agreat idea.  When I make lasagna there is always so much left over.  This will hefp with make ahead receipes.  We love lasagna.  I am going to do this next time I make it.
