My children have recently left home, so my husband and I are left here, used to cooking for 4-6 people, not 2! I am still cooking the same amount, because I never know who will show up. I try to freeze meats in individual portions, to have the flexibility to thaw when needed. However, you can't do that with a roast or a turkey, etc. How have you adjusted, when you have become "empty nesters"? I am not fond of leftovers, especially meats.
