Hi aspb52411a,

I don't know how old your children are but maybe you can involve them in menu planning and vegetable choices. It would be fun to have them in the kitchen helping- maybe putting together a big green salad. Add nuts, crumbled cheese and cut up fruit like chopped apples. You can even make your own dessing with olive oil, vinegar, a little mustard and some salt and pepper. When our son was young we grew radishes in pots on the porch.  ( Before we had a yard )They sprout  in 2 or 3 days, very exciting ! ( They take about 25 days to mature.) You could try tomatoes ,lettuce, or carrots. Kids love growing anything in the garden or in pots.  There are many great recipes for pizza that have vegetables as toppings. Lots of choices, have fun with your veggies !

Re: More Veggies!

My son didn't touch cabbage until he grew his own little cabbage in our garden.  Then he wanted to slice it up and share it with friends and family and thought it was the best thing he'd ever tasted.  Having children involved in growing some veggies is a great way to get them to eating them!  It doesn't take much.  We have a few raised garden beds and get lots of food off of them.  Also, letting them look at the fresh produce in the store and choosing something that looks good or interesting to them can work as well.  We've chosen weird things from the produce section that we had to research to know what to do with it!  But it makes trying new things fun and interesting.  Hope this helps!

Re: More Veggies!

I remember thinking the following two recipes were genius at hiding spinach a most healthy vegetable amongst meat which trumps it in both taste and texture.

Beef and Spinach Enchiladas

Savory and sweet breakfast sliders

PREP: I find kids will try anything they aid the preparation of: chopping cooked veggies with a plastic or kid-safe knife, sorting them when they're raw, breaking them, washing or drying them are all ways to get hands on without involving heat or sharp utensils.

SPRINKLES: A pre-determined and plated by you amount of "sprinkles" like parmesan, italian seasoning, salt, pepper, lemon zest, etc. are another way to let them be involved in the making of their veggies by topping themselves at the table.  In my experience kids will try almost anything you let them "sprinkle" anything on.
