Super Summer Sandwiches

Stacked high for a quick meal or packed for a picnic, sandwiches are summer fare extraordinare! Dress them up with our top sandwich tips. 

  • Feeding a crowd? Make a meal everyone will like – and can make for themselves! A sandwich bar is an easy way to please the entire baseball team or a whole family reunion. Set out white and wheat submarine sandwich buns plus your favorite fixings. Make it simpler by buying pre-sliced meats and cheeses and shredded lettuce at the store. A selection of tasty condiments such as mayo, honey mustard and barbeque sauce will let everyone have their sandwich their way!
  • Viva Italia! Impress your guests with a hearty sandwich that calls to mind the deliciously simple meals of the Italian countryside. Pita pocket bread opens wide for prosciutto, provolone cheese, thinly sliced fresh tomatoes and a dash of bottled Italian dressing. Add a pinch of dried Italian herbs, and garnish with a sprig of fresh basil on the side. Look for prosciutto in your grocer’s refrigerated deli section.   
  • A taste of Mexico to go! If you’re heading to the cabin for the weekend or the park for the afternoon, here’s an easy sandwich that assembles quickly, travels well and heats up in a heartbeat. Season store-bought cubed cooked chicken (or pulled rotisserie chicken) with Old El Pasoâ taco or enchilada sauce. Prepare several cups of white rice and allow to cool, or try Old El Pasoâ Spanish Rice. Spoon seasoned chicken and rice into a large tortilla, sprinkle with grated cheese, and roll tortilla to close, folding sides in while rolling. Place sandwich on a sheet of aluminum foil, folding top and sides of foil to seal closed and hold sandwich tightly together. When you arrive at the cabin or park, heat sandwich packets over low-heat on a gas or coal grill, or over an open fire using a fish grilling basket, just long enough to heat through. (Can be microwaved, too!) Keep sandwiches in the cooler or refrigerator until ready to heat and eat. Serve with extra sauce on the side.
  • Add CRUNCH! Any sandwich tastes new and different on crusty bread, with its crunchy Old World exterior and soft-as-a-cloud interior. Try Pillsbury’sâ Country French Loafâ, found in your grocer’s refrigerated section. Using a sharp serrated bread knife, cut the loaf into sandwich lengths, then cut lengths in half horizontally. Add selected meats, cheeses and veggies – and enjoy a sandwich that sounds as good as it tastes!
  • Go Greek! Using Mediterranean flat bread as a base, spread with hummus (chickpea and garlic spread found in your grocer’s deli section) and top with finely diced green and black olives, tomatoes and onions. Drizzle with a scant amount of olive oil, then sprinkle with grated parmesan cheese; salt and pepper to taste. Serve as is, or put under the broiler or on the top rack of the grill to melt the cheese.
  • Finger food at its best! Bake some Pillsburyâ Breadsticksâ and let cool slightly. Meanwhile, using small custard dishes, add a scoop of peanut butter to each and microwave 15 seconds to soften. Gently swirl grape jelly into the peanut butter with the tip of a knife (don’t mix or blend). Dip warm breadsticks into the PB & J mixture for the goodness of this classic sandwich without the hassle of assembly – a sure hit with kids responsible for making their own lunches this summer!
