INGREDIENTS
2tablespoons olive or vegetable oil
1large onion, chopped
2stalks celery, sliced
2garlic cloves, minced
3cups coarsely chopped cabbage
2medium carrots, sliced
5 1/4cups Progresso® beef flavored broth (from two 32-oz. cartons)
2 cups water
1 1/2teaspoons dried Italian seasoning
1/4teaspoon pepper
2cups Green Giant® Valley Fresh Steamers™ frozen cut green beans
2small zucchini, sliced
2(15.5-oz.) cans red beans, drained, rinsed
3oz. (1 cup) uncooked rotini (spiral pasta)
DIRECTIONS
1.Heat oil in Dutch oven over medium-high heat until hot. Add onion, celery and garlic; cook and stir 2 to 3 minutes or until onion is tender. Add cabbage, carrots, broth, water, Italian seasoning and pepper; mix well. Bring to a boil. Reduce heat; cover and simmer 15 minutes, stirring occasionally.
2.Return to a boil. Add all remaining ingredients; mix well. Simmer, uncovered, for 10 to 15 minutes or until vegetables and rotini are tender, stirring occasionally. If desired, season to taste with salt and pepper.
