Strawberry Spinach Salad with Poppy Seed French Rolls

frozen crusty French or crusty wheat dinner rolls (from 12.4-oz bag)
1
tablespoon honey
1/3
cup Yoplait® Original 99% Fat Free strawberry yogurt

cups baby spinach leaves
1
cup sliced strawberries
1/2
cup crumbled blue cheese (4 oz)
2
tablespoons coarsely chopped toasted walnuts

teaspoon butter or margarine, softened
1/8
teaspoon poppy seed

Directions

  • 1 Bake rolls as directed on bag. Meanwhile, in small bowl, stir together honey and yogurt. Arrange spinach leaves on 2 individual salad plates. Top with strawberries; sprinkle with blue cheese and walnuts. Drizzle yogurt mixture over salad.
  • 2 Remove rolls from oven. Brush with butter; sprinkle with poppy seed. Serve warm with salad.

I've been making this for years! I use parmesan curls, not bleu cheese, and Natural (fresh) Orange Juice in place of the honey mixed with the yogurt. You can also grate some orange rind over it, add other veggies - radishes or asparagus are two I have used - and dried fruits (cherries, apricots, are good.) Love it !

I was amazed at how these flavors worked so deliciously together. I use gorganzola cheese out of preference and have had many compiments from guests. I now use the same premise but with craisins and raspberry vinaigrette dressing. We never get tired of this salad!!!
