Eggplant: More Than Just a Pretty Color

True, eggplant is one of the more interesting colored veggies around. But it also makes an awesome addition to so many kinds of recipes, including Mediterranean and Middle Eastern dishes.

 

Not So Fresh

Raw eggplant is safe to consume but tastes bitter because its seeds contain nicotinoid alkaloids, a close relative of tobacco. So you might want to stick with cooked recipes.

 

Beef Up Your Meals

Because eggplant absorbs the flavors it’s cooked in, it’s great for adding a little substance to veggie sides, grilled sandwiches and pasta sauces. Just a few quick tips:

 

  • Salt the eggplant first to get rid of the bitterness and excess moisture.
  • Blend oven-softened eggplant with Mediterranean ingredients for a new twist on hummus.
  • Add it to chopped leftovers, garlic and olive oil for a chunky spread.
