Pork and Polenta for Two

Show some love and make this easy dinner for two featuring succulent seared pork in a balsamic-cherry sauce with creamy polenta.

You don’t need to go out to enjoy restaurant-quality food. Bring it home by preparing simply seared pork and polenta with a sweet-tart cherry sauce.

 

Here’s what you’re going to need: Boneless pork chops, cherry jam, balsamic vinegar, veggies, quick-cooking polenta, a touch of cream cheese and some butter.

 

Pork and Polenta for Two Ingredients

 

First, season those pork chops. Cook them in a non-stick frying pan until golden brown and cooked through.

This is a good time to make your polenta. Just follow the directions on the package. It’s really easy!

 

You can also get your veggies into the microwave.

Now, transfer the pork to a plate and cover with foil, and then make the sauce. Add cherry jam and balsamic vinegar to the pan. Add some water. You want a thin but shiny sauce. It will only take a minute.

 

Just before serving, add some cream cheese and butter to the cooked polenta.

Put the polenta on a plate. Top with the pork and sauce, and then add a side of veggies.
