Mini desserts are always a hit at my parties. For spring and summer gatherings, these little lemon berry pizzas are sweet, tart and refreshing. With Pillsbury® Ready To Bake!™ cookies and three easy steps, you can create the delicious treats in your own kitchen.
First, break apart the cookie dough and place on a cookie sheet. Bake as directed.
Once cool, spread a spoonful of lemon curd on top.
Sprinkle with your favorites berries. I like a combination of raspberries, blueberries and blackberries.
As an added bonus, you can make these mini desserts ahead and refrigerate them overnight!
